The dishes consist of only duck, green onions, and water that is slowly cooked on low heat for two days.
This brings out the tenderness of the meat and the richness of the taste.
The duck can be enjoyed with simple green onions to bring out the complementary flavors of the duck.
The great thing about these noodles? No chemical seasonings are used and all the ingredients are natural!

The next restaurant we want to talk about is Mentaku Ushio Ueno-seimenjo, which is rapidly growing in popularity and is on the rise with help from visits from celebrities and public figures.
The business won first place in the Rookie Award Category of ‘’TRY 2013-14 Tokyo Ramen of the Year’’ – so you can trust that the ramen from this place is going to be worth it!

‘’I orderd Nihonichi Shoyu Soba. “Nihonichi” is not the self-proclaimed soba noodles in Japan, but is taken from the brand soy sauce called “Nihonichi Soy Sauce”.
The topping is 1 pork char siu and 3 duck char siu. Eggs, trefoil, Japanese ginger, perilla, etc. are also added.
The duck char siu is excellent. This duck is not moist but has a unique ham-like texture. Plenty of fat.
On the other hand, pork char siu is moist with pork shoulder loin. You can feel the delicious taste of pork. Herbs also work well and are delicious.’’
Tori Paitan Soba(鶏白湯そば)
‘’Daisen chicken from Tottori prefecture is used luxuriously, and the soup is made by condensing the taste of chicken, paying attention to the time and heat of the meal, and using a unique method and ingredients to create a deep-tasting Western-style Chinese noodles.
The soup is creamy and more like a stew than a ramen soup. It has a lot of chicken flavor and is very delicious.
The noodles are a medium-thin straight type, and the soup is entwined with them.
The toppings are meat-wrapped asparagus and poached eggs, which are also unique.
The meat-wrapped asparagus is fragrant, and the poached egg is so soft that the yolk breaks, and I’m surprised!’’

Menya Musashi Bukotsusoden(麺屋武蔵 武骨相傳)
The very last store we bring to you today; this ramen shop has a signature menu of black, white, and red tsukemen.
The most popular, black, is made of carbonizing onions, garlic, and coffee beans and has a slightly bitter taste that perfectly balances the rich soup.
In this shop, you need to purchase a ticket at the vending machine next to the entrance.
‘’I orderd “black” tsukemen. A black soup with a nice scent of charred oil. The noodles are chewy and heavy.
Excellent compatibility between noodles and soup! Noodles with a firm texture and taste that are not defeated by the rich soup.
By mixing both, the deliciousness spreads many times.
The roast pork topping is of a quality that you can’t think of as a topping for tsukemen.
Unlike char siu, which melts in a fluffy manner, it has firm flesh and a slightly sweet sauce.’’
